Hello, I'm Rossana...

 

Rossana Di Maggio currently lives between Florence and Dubai.

 

Of Sicilian origin, she inherited from her land the ability and the charm to let herself be contaminated by different cultures of peoples, as Sicily , land disputed for centuries by the Greeks and Romans, by Byzantines Arabs and Normans, by Swabians and Spaniards, Bourbons and finally the Savoy.

 

Of these fusions, Sicilian Cuisine full of flavours, aromas and colours couldn’t fail to benefit.

 

Over the years, Rossana thanks to her work as a flight attendant, travels around Italy and overseas and lives first in Sardina then in Tuscany (Florence) where she attends The Cordon bleu Cooking school. At the same time she meets the man of her life, now her husband.

 

Together decide to move to Dubai, a multicultural city inhabited 90% by expats and rich in multiple and appetising culinary traditions . She attends IKKA ( International School Cooking) participating in Lebanese , Thai, Peruvian,Indian and Japanese cooking classes. These various cooking classes bring Rossana new work experiences as personal chef in Costa Smeralda, Dubai and Saint Moritz.  

 

She renovates a prestigious apartment in the heart of Florence, puts all her life experiences to good use, opens the doors of her home to guests around the world, who want to feel at home and be captivated by her cuisine.

 

The menu offer proposed by Rossana is a journey from north to south Italy, with tastings of international cuisine , with an eye to quality and seasonality

 

Upon request , she offers traditional iIalian cooking courses, from the basic recipe such as a succulent Bolognese sauce to fresh homemade pasta to an irresistible Sicilian parmesan or dessert as Tiramisu or Cannolo ( crispy waffle ) with ricotta cheese, King of Sicilian Pastry
